‘Slaw’ with roasted seeds and raisins

Musquee de Provence, a.k.a. Fairytale pumpkin (think Cinderella’s carriage), is a French heirloom and the only winter squash that I know taste good raw. As it ‘cures’, its color turns into a powdery orange. Productive, disease-resistent, and you can’t beat the look.

  1. What a beautiful pumpkin! I tried growing a Musquee de Provence this year and just picked three hefty pumpkins tonight. I haven’t been able to find much information about harvesting these pumpkins, and I was concerned about picking them when they were still green. But, I read somewhere that they continue to ripen after being picked. These are the first pictures I have seen of the process. Thank you so much! Hopefully my three pumpkins will cure up just as nicely.
